Gluten-free Lemon Pound Cake

Deliver a dense and moist mouthfeel with a hint of rice aroma.

Ingredients(350 ml pound cake)

Handmade Rice Flour Pancake
1 pc
Egg
2 pcs
Unsalted Butter
80 g
Sugar
80 g
Honey
10 g
Milk
80 ml
Lemon Zest
0.5 pc
Lemon for Decoration
0.5 pc

Preparation Beforehand:

・Bring the unsalted butter to room temperature.

・Line the pound cake mould with parchment paper.

・Grate the lemon zest.

・Preheat the oven to 180°C.

Directions(Approx. 60 minutes)

  1. Mix the unsalted butter and sugar; add the beaten egg to the mixture, a little at a time.
  2. Add honey, milk and lemon zest to Step (1).
  3. Mix the Handmade Rice Flour Pancake and Step (2) mixture with a silicone spatula. Pour the mixture into the cake mould.
  4. Bake at a 180°C oven for about 35 to 40 minutes. Cool down the cake and enjoy.
