What is WA Discover Food?
A lunch series featuring "Ozen" set meals crafted by chefs from Japanese Restaurant WA, who visit local producers across Japan to select the finest ingredients representing rich, traditional regional flavors. Starting in the autumn of 2025, the series has featured menus from Kochi, Fukushima, Chiba, and Kyoto prefectures.
For this 5th edition, Ibaraki Prefecture takes center stage. The set meal is served in three courses: "Ichinozen (First Course)" featuring six small dishes showcasing nature's bounty, "Ninozen (Second Course)" highlighting the rich flavors of Hitachi beef and soba, and "Sannozen (Third Course)" offering a dessert made with Japanese chestnuts. Through these three courses, we offer a taste of seasonal Ibaraki, featuring ingredients nurtured by its fertile land and rich seas.

Ichinozen (First Course)
We have prepared six small dishes that allow you to savor the rich bounty of Ibaraki's nature, featuring local specialties such as Ukishima lotus root and Okukuji Shamo chicken, as well as traditional local dishes like Shoboro natto and Sumitsukare. Please enjoy them with freshly cooked Koshihikari rice from Ibaraki and miso soup.
Ninozen (Second Course)
Hitachi Wagyu Beef Soba
Hitachi Wagyu beef shank is slowly simmered with soy sauce, sugar, and ginger until tender. The rich umami of the beef shanks adds depth to the robust aroma of soba noodles made from Hitachi Aki Soba, Ibaraki's renowned buckwheat variety. We serve this dish on a piping hot ceramic plate, allowing you to enjoy the noodles by dipping them in the sweet-flavored broth.
Sannozen (Third Course)
We have sandwiched paste made from Japanese chestnuts grown in Ibaraki Prefecture and mascarpone cheese between chewy pancakes, along with gyuhi (soft mochi) and boiled sweetened adzuki beans. This dessert harmonizes the appeal of both Japanese and Western styles, where the rich aroma of the chestnuts and the depth of the mascarpone cheese perfectly complement each other.
